U know what its even better that combining food&wine??? Well, aso an awesome playlist, depending on the situation  the music can also be very versatile, for example:
1. Lets suppose you are on a date, you have as a main dish beef with potatoes and a very simple salad, now? of course a good pick is a red wine, probably a malbec will be awesome ;) but what can you listen to? The wine and the dish are kinda strong you are not gonna put a song of Suicide Silence -_- Nooooo maybe you want to try with contrast, FLUME is really a very good band that you should take a look at, it really works and it pays off ;)
2. Now lets suppose is the same dish and wine, but you are alone, so then  maybe Suicide silence is a good call !
3. Now lets suppose u dont have nothing to eat or drink, so then my friend just listen to good music and you’ll be fine :)

What is Ecuador doing for its gastronomy?
Well, since I studied culinary arts (2006 until 2011) I could see a lot of aspects, that made me realice how Ecuador was improving, and yes also getting stucked sometimes. Its really important to make a very deep analysis of how things have changed over here, so we can understand the process that we have been having this last century.
YES CENTURY
Well, culinary arts took place in Ecuador with the arrival of Fancy Hotels, is there where the head chefs were only “international chefs” they, were the only one who could make decissions in the kitchen, dishes, techniques, etc. and the assistants were only pretty young people who were with their minds open, just to learn, later these young assistants will become the first ecuadorian chefs in hotels and will also open their own restaurants, making the first gastronomical revolution in our country. 
So, whats the scene in the 40’s until the 80’s? well that ! only international executive chefs, with just a few ecuadorian learners with lot to prove.

In the 90´s more and more “experienced” cooks were getting more recognizment in the country, and also in other contests, where the presence of Ecuador was getting bigger every time, by the chefs, not by ecuadorian food, cause yes, until here, as a country we didnt chefs that had a clear idea of what  ecuadorian food really is, I mean, it was like an effect, they were taught by international chefs, they learnt international techniques and international dishes, so ECUADORIAN CHEFS DID NOT KNOW HOW TO COOK ECUADORIAN FOOD.

Sad but true, and there was a university who made the first step to kinda change this, UTE, created GASTRONOMY, as a carreer, and was the first university to offer a program, in which new enthusiasts, but non experienced people could learn how to cook, with the time other universities follow this model, like USFQ, UDLA, and 300 centers more yes, now there are more than 300 centers of culinary arts in Ecuador.
Now the idea was good, to educate people that liked this profession, to taught them, but sadly the majority of them did never get the experienced of the chefs who were then, the principal chefs in every hotel and restaurant, so the majority of students were just left aside for people who had experienced, so, GASTRONOMY STUDENTS KNEW HOW TO ADMINISTRATE A RESTAURANT, BUT THEY DID NOT KNOW HOW TO COOK. Besides the fact that each university started to think that they were the only option and the best one to follow.
A problem right?
So what happend from the 90’s until the 00´s, well the new enthusiast students, started to create their own business, since no one hired them, so that was an inspiration for all of them, to be in a way, more creative, where the could develop what they learnt, and get the experience by themselves, and as a beautiful consequence, there are now, more themed specialized places in the country, a beautiful variety.
NOW?
Well, our neighboor is kinda famous, PERU, the succes that this country has achieved, has made us realized of how important our own cuisine really is, no matter if you are an old school or a millenial chef, the only thing that matters is to make it work.
Ecuador right now is getting a union of all the chefs, universities, so by doing that we are getting closed to really have a country where the gastronomy is a reason to visit it.

Yes, red  wines are different, if you are not  familiar with wine, probably for you all the wines are the same, and they do not have differences between them, well let me tell you that you are so wrong.
Each variety of wine has its own characteristics, the profile they develop is because of their tannins, in case of being red, and the tannins are the responsible of the color, flavor and even the smell of the wine, so they are very very important for the final profile of the wine.
Something interesting about the colors of red wine, is that Usually when they have more purpple tones the wine is younger, while more red tones it has is older, but be aware sometimes when is too dark, almost with brown tones, there is the chance that the wine is damaged, if it is a good, reserved wine, this tone can be actually good.
Basic tips of colors of red wine, soon I’ll be doing a post with more information of colors in wines, their characterestics depending of the variety of grape.

What should you be eating in your breakfast? aaaand What you should be listening while you enjoy the first meal of the day !!!

Well, I dont know you guys but its kinda hard to have always these pretty healthy breakfast that are always looking nice in pictures, and obviously is good for our health, but really guys sometimes when I wake up I only have time to put some clothes on and run like a crazy person to get on time to my work, so time for healthy meals, sometimes (always) is hard to me, and keep in mind that Im a chef, and I work as a teacher and is horrible to cook when you are dying slowly due the lack of food in your system, so SOLUTIONS?

Well the only solution is not to find easier recipes, NOOOO, the solution is to set the alarm twice and get up earlier so you can have time to eat a healthy breakfast. (yeah I know Is hard to realice about the truth guys, the reality is that the only ones that are responsible of our health is ourselves, and the way that we eat and the way that we enjoy it, can really improve everything guys, so make an effort and do it)

What you should always have on your daily breakfast?

- Fruits: I recommend you to use non “heavy” fruits, I mean what is the purposse of the breakfast? Of coursee is to provide energy to your mind and body, so that is why I wont eat bananas, grapes or YES im gonna say it, Apples, why? well, these fruits have lots of calories that kinda makes the energy go away, besides they make you feel full, when your body just simple have not just consume enought, so its kinda tricky. 

I recommend you to use red fruits such as straw, blue, rasp, berries (all the berries) kiwi, watermelon, melon, coconut, for fruits that are too acid like passion fruit, you can extract the juice of it and put 2 spoons of brown sugar in a pot, make it reduce a bit, and you’ll have a pretty homemade jelly. 

- Cereal, this is awesome for digestion, besides you can find lots of flavors now, not only cereal made of corn or oat meal, now there is a huge variety of andean cereals that are delicious and they combine so well with fruits, Quinua, Cebada, Amaranto.

Yogurt, milk or natural juice, yeah you know how coffee is not very healthy to drink every morning right?
